Chipotle Recipe

A couple weeks ago I made Chipotle Burrito Bowls with my host family, I figured I’d share the recipes we used and put everything in one place in case anyone else would like to try it.

Burrito Bowl:

Chicken Marinade
2 oz dried ancho chiles or dried pepper of choice
1 tsp black pepper
2 tsp cumin powder
2 tbs fresh oregano, chopped
6 cloves garlic
1/2 red onion, quartered
1/4 cup vegetable oil
4 cuts of meat of choice, such as chicken or steak

Soak dry chiles in water overnight or until soft. Discard water. Remove seeds.
Add all ingredients except meat in food processor. Puree until smooth.
Spread mixture over meat and refrigerate at least 1 hour, up to 24 hours.
Heat grill to about 400 degrees, or if cooking inside heat small amount of oil in skillet or grill pan over high heat. Salt meat to taste. Grill meat about 4 minutes per side, depending upon thickness, until done (We just cooked the chicken in a pan on the stove).

2 Cups Brown Rice
1/4 Cup Cilantro
1/4 Red Onions
1 Lime
Pinch of Salt

Make brown rice, once it is finished  add all other ingredients and mix together.

Guacamole (5 mins, 3 People):

3 Ripe Avocados
1/2 Cup of Chopped Red Onions (Small)
1/2 Cup of Chopped Cilantro (Small)
1-2 Chopped Jalapeños
2 Limes (Squeeze Juice to your Liking)
Pinch of Salt

Place Avocados in a bowl and mash with a fork – You will want to leave it a little chunky, then add all the other ingredients and mix, Enjoy!

Other Ingredients:

Black Beans or Pinto Beans

Final Instructions:

Once you have made everything, fill a bowl with the mixed brown rice, then add Chicken, Guacamole, Cheese, and anything else you’d like to the bowl.

We just made these two things which make for a great Chipotle Style Burrito Bowl, but I also wanted to add Chipotle’s special salad dressing sauce because I love adding that to my burrito bowl at Chipotle.

Chipotle’s Honey Vinaigrette Recipe:

1/2 cup red wine vinegar
1/3 cup honey
1 tablespoon adobo seasoning
2 tablespoons kosher salt (if using table salt, only 1 tablespoon)
1 teaspoon pepper
1 tablespoon fresh oregano, chopped
1 1/2 cups olive oil

Mix all ingredients in blender, adding oil slowly at the end.
